On-The-Go Egg Bites

I am always looking for quick and convenient breakfast meals that are filling, and nourishing. These egg bites are two ingredients and are packed with a variety of nutrients including, vitamin B12, calcium, zinc, vitamin D, and omega-3-fatty acids. Each egg bite is about 3/4 of a whole egg. Did you know a whole egg is 7 grams of protein? That's amazing!


Ingredients

  • 8 whole organic pasture raised eggs

  • 100% grass-fed beef sticks (optional, but can also substitute for ham, bacon, etc or a veggie like spinach or even chopped mushrooms).

  • salt and pepper

  • avocado oil

  1. Coat a silicone muffin pan with avocado oil. I like to drip some of the avocado oil onto a paper towel and use that to coat the individual circles.

  2. Whisk eggs in a bowl and use a ladle to evenly distribute the eggs into the muffin pan. Fill each circle about 3/4 of the way.

  3. Chop your meat of choice or veggie of choice.

  4. Evenly distribute the meat or veggie into the eggs.

  5. Top with salt and pepper.

  6. Bake at 350 degrees for 30 minutes. Be sure to check after 20 minutes, as everyone's oven works differently.

Makes 9-12 egg bites depending on size of muffin tins and how much you fill each individual circle.


Store in a the refrigerator in a glass container. These can be eaten cold, but I prefer them warmed up. To re-heat, simply place egg bite onto a frying pan until fragrant.
